Coffee - Ethiopia, Sidamo Acacia

These beans are produced by smallholder farms in the Sidamo region of Ethiopia & are a classic representation of coffee from this area! The farmers go through their trees every eight to ten days picking only the cherries that are at peak ripeness and then depulp and wash the beans by hand in the community washing stations before laying them out to dry in raised beds.
